ABOUT THIS COFFEE
Dota sits just off the main Tarrazu valley, higher and more remote than most of Costa Rica's planted land. This lot comes from a micro mill that buys ripe cherry from smallholder families farming the surrounding hillsides, at elevations running anywhere from 1,200 to 1,900 meters. That spread is the point — blending across a range of altitudes and small plots is what gives this coffee its unusual evenness. Nothing spikes, nothing drops out. The mill depulps mechanically and soaks the seed before it goes to the patios, a low-water method that produces exceptionally clean green coffee. What lands in the cup is a deep, chocolate-forward everyday coffee with a creamy weight to it and just enough acidity to keep it from going flat. This is the pot you make on a Tuesday morning and finish without thinking about it. Roasted a little darker, it pulls a serious espresso shot.
