Where It Comes From
Yirgacheffe is a small region in southern Ethiopia, sitting at elevations between 5,500 and 7,200 feet above sea level. Ethiopia is widely considered the birthplace of coffee, wild coffee plants still grow in its forests today and Yirgacheffe sits at the heart of that heritage.
The high altitude, rich soil, and cool temperatures slow down the development of the coffee cherry, giving the beans more time to absorb nutrients and develop complex sugars. The result is a cup unlike almost anything else.
