It comes from Gathaithi, both the name of the washing station and the local Farmers Cooperative Society that runs it, one of the small, tightly managed \"factories\" Kenya is famous for. More than 1,250 coop members deliver cherry here, farming at an average of 1,700 meters above sea level, though plenty of farms sit on either side of that line.\u003c\/p\u003e\n\u003cp\u003eCherry at Gathaithi goes through Kenya's classic three-stage wash: pulped on a disc pulper, fermented overnight, rinsed clean, then soaked once more in fresh water before the parchment is laid out on raised beds to dry in the sun. This particular lot was separated out as AA, Kenya's largest screen size grade, and it's easy to see why the sorters pulled it aside. Our head cupper scored it 92.5 points, and we roasted it medium on our fluid bed roaster to bring out its darker fruit and cocoa-toned side, while keeping the bright, organizing acidity Nyeri coffees are known for.
